As a major foodie, I was super excited to be a part of the Xuan food committee. My team and I came up with a menu that encapsulates all the fresh and warming feelings one gets when eating Vietnamese food.

 

The first item on the menu is Gỏi đu đủ (Vietnamese green papaya salad). This dish is very simple, made of shredded green papaya, dressed with a sweet sour soy sauce, and topped off with the optional (however HIGHLY recommended)  fresh basil, peanuts, and thinly shredded beef jerky. This is personally one of my favorite Vietnamese dishes, as I love the freshness and crunch from the papaya and basil and the sweetness from the sauce. As I do love the flavors, this dish reminds me of the sweet summer barbecues I have with my family.

The next dish on the menu is Bún Chả Giò. This is one of our culture’s many noodle dishes, made of rice noodles, pared with a plethora of herbs, fresh and pickled veggies, and your favorite… egg rolls! Again I love this dish for its freshness and how customizable it is to your liking!

Our last dish on the menu is one that brings me such warmth and comfort on a chilly day, a bad day, or any day, a nice bowl of Vietnamese curry will satisfy your fix! This dish is packed with bold blends of flavor from spicy yellow curry, garlic, onion, and lastly lemongrass. Made with a base of coconut milk, chicken, and root vegetables like carrots and potatoes, this curry pares very well a warm loaf of bread, my favorite being french style baguettes. This dish will leave your tummy feeling warm and satiated!
